       'sNice, NYC, April '10 - Present
        Vegan Baker
        Established NYC cafe in West Village and Park Slope, now with new location in Soho. Baking assortment of scratch vegan baked goods including cookies, cupcakes, bars, brownies, muffins, and cakes. Consistently working on new seasonal and allergen-free goodies. Responsible for opening cafe, receiving orders, and inventory.

        
Cafe Colonial, NYC, Sept. 09 - April '10:  
        Bartender / Barista / Bread Baker
         
Established NYC, Nolita restaurant. Developed and baked hand mixed, hand kneaded, artisan bread once a week while also working full time as bartender/barista. Position entailed making all espresso and cocktail drinks, handling all money transactions, answering of calls, and the serving of customers at bar as well as bussing and waiting tables. Responsible for daily opening and closing procedures.

        
Pasha Mezze, Norfolk Va, Feb. 09 - Aug. 09:  
        Head Pastry Chef / Bread Baker
         Pastry chef for award winning fine dining restaurant in historic Ghent of Norfolk, Va. Baked daily bread of ciabatta and stone-ground whole wheat ciabatta as well as all desserts. Product sold in-house, at adjoining coffee shop, seasonally at farmers market, and wholesale to local organic stores. Interest in whole, local, seasonal sustainable foods. Trained new pastry chef.

       Reputable used bookstore in historic Savannah. Customer service, knowledge of product, handling of emails and telephone messages, out of print book searches, opening wholesale accounts, research, key-holder, off-site sales, as well as creating and sending of newsletter.

        
Harris Baking Company, Savannah Ga, June 08 – Feb 09:  
        Bread & Pastry Baker 
        Employed as primary full-time artisan bread, croissant and pastry baker. Introduced baguette to daily bread. Produced in-house bread and wholesale orders of up to 200+ loaves/rolls daily. Trained new employees.

        
Lulu’s Chocolate Bar, Savannah Ga, Nov. 08 – Feb. 09:

        Voted Best Place For Dessert by Savannah Magazine and Connect. Made all baked goods and chocolates. Prepared and served Sunday brunch.

Artisan baker's apprentice for national award winning bakery. Primary mixer trained in temperature control, autolyse, use of pre-ferments, shaping traditionally and hearth baking. Responsible for quality and production in owner’s absence. Started and executed daily bread donation to homeless shelter.
